Pumpkin Mousse

This Pumpkin mousse is SO delicious! It's my hubby's favorite. And best: I've included the low-calorie recipe!

What you need:
Regular Pumpkin Mousse
1 15 oz. can of Libby's Pumpkin Pie mix (this one has the sweetener and spices mixed in)
Cool whip (12 oz.)
Vanilla OR pumpkin box mix pudding
Gingersnaps

Low Calorie Pumpkin Mousse
1 15 oz. Canned Pumpkin (you don't want the pie mix, it already has the sugar mixed in)
3 packages of zero calorie sweetener (just the little packs you'd put in your coffee)
Sugar free vanilla box mix pudding
Cool whip (12 oz.)
Pumpkin Pie spice (about 1-2 tsp, depending on how you like it)
Gingersnaps
 
Mix all of your ingredients together (except the gingersnaps) with a whisk. Yup, it's THAT simple. Add the gingersnaps to the top for garnish, either crushed up, or set decoratively on top.
For parties, I like to grab an extra tub of cool whip, and alternate layers of mousse and cool whip, and then do the gingersnaps as a garnish on top. YUM! 
I've also made some homemade whipped cream, by whipping together heavy whipping cream, pumpkin pie spice, and vanilla. It makes a great garnish on top!
